Whole Wheat Mini Pizzas with Vegetables

Mini pizzas? Yes! And in 3 different versions! It’s the perfect idea for a party snack.

Ingredients

Mini Pizza with Eggplant and Mushrooms

  • Eggplant – 40 g
  • Walnut – 10 g
  • Mushroom – 1 piece
  • Salt – 0.25 teaspoon
  • Shallot – 0.25 piece
  • Pesto – 1 teaspoon

Tomato Sauce

  • Dried basil – 1 teaspoon
  • Onion – 1 piece
  • Ground chili – 1 pinch
  • Tomato paste – 1 tablespoon
  • Honey – 2 teaspoons
  • Olive oil – 2 tablespoons
  • Dried oregano – 0.75 teaspoon
  • Salt – 1 teaspoon
  • Canned diced tomatoes – 400 g
  • Garlic clove – 3 pieces

Decoration

  • Fresh basil – 5 g
  • Black pepper – 1 pinch
  • Olive oil – 1 tablespoon
  • Arugula – 20 g
  • Salt – 0.25 teaspoon

Green Mini Pizza

  • Broccoli – 100 g
  • Sunflower seeds – 1 teaspoon
  • Feta cheese – 20 g

Pizza Dough

  • Brown sugar – 1.5 teaspoons
  • Dry yeast – 7 g
  • Whole wheat flour – 225 g
  • Olive oil – 3 tablespoons
  • Salt – 0.75 teaspoon
  • Water – 160 ml

Mini Pizza with Artichokes

  • Cherry tomatoes – 2 pieces
  • Artichoke hearts – 2 pieces
  • Grated mozzarella – 1 tablespoon

Preparation

Step 1: Prepare the Pizza Dough In a bowl, combine 130 g of flour, yeast, sugar, and salt. Add water and olive oil. Mix with a spoon for about a minute. Gradually add the remaining flour until the dough starts to form a ball. It will be slightly sticky. Knead it for 5 minutes on a floured surface. If needed, add more flour.

After kneading, the dough should be smooth and elastic. Divide it into 3 parts. Form each part into a disc about 0.5 cm thick. Transfer them to a baking sheet lined with parchment paper.

Step 2: Prepare the Tomato Sauce In a deep saucepan, sauté finely diced onion and minced garlic in heated olive oil for 3 minutes. Add the remaining ingredients and spices. Reduce the heat and simmer for about 30 minutes until the sauce thickens.

Step 3: Prepare the Green Mini Pizza Spread 1-2 tablespoons of tomato sauce on the dough. Arrange broccoli florets and pieces of feta cheese. Sprinkle with sunflower seeds.

Step 4: Prepare the Artichoke Mini Pizza Spread 1-2 tablespoons of tomato sauce on the next dough. Arrange artichoke hearts and halved cherry tomatoes. Sprinkle with mozzarella.

Step 5: Prepare the Eggplant and Mushroom Mini Pizza Spread 1-2 tablespoons of tomato sauce on the last dough. Arrange slices of eggplant (previously salted and dried with a paper towel), sliced mushroom, and chopped shallot. Top with pesto and walnuts.

Step 6: Bake the Mini Pizzas Place the baking sheet with the pizzas in a preheated oven at 220°C for 10-15 minutes.

Step 7: Decorate and Season the Mini Pizzas Decorate the green pizza with arugula, the artichoke pizza with fresh basil. Drizzle all three with olive oil, and season with salt and pepper. Serve with the remaining tomato sauce.
