Inspired by haluszki with bryndza, these special haluszki with smoked mountain cheeses served with cranberry sauce are a delicacy that transports you straight to the Polish Podhale region.
Ingredients
- Potatoes – 400 g
- Eggs – 2 pieces
- Wheat flour – 150 g
- Salt – 2 pinches
- Black pepper – 1 pinch
- Oil – 2 tablespoons
- Mountain cheese – 80 g
- Garlic clove – 1 piece
- Parsley – 2 tablespoons
Cranberry sauce
- Cranberry jam – 2 tablespoons
- Dijon mustard – 1 tablespoon
- Lemon – 0.5 piece
- Oil – 100 ml
- Parsley – 2 tablespoons
Preparation
Season squeezed potatoes with salt and pepper to taste. Then add eggs and mix thoroughly. Add flour one tablespoon at a time until the dough reaches a consistency similar to thick sour cream. Then add starch to the dough and mix thoroughly again.
In a bowl, combine cranberry jam, mustard, juice, and zest from half a lemon. Mix thoroughly. Then slowly pour oil into the sauce while stirring continuously. Finely chop the parsley and add it to the sauce. Mix.
Bring water to a boil in a pot and place the dough for dumplings in it with a spoon. Cook them until they float to the surface, then remove them with a slotted spoon. Grate the smoked mountain cheeses on a fine grater, crush the garlic, and finely chop the parsley.
Fry the cooked dumplings in hot oil until they are browned on all sides. Sprinkle most of the grated mountain cheese over them while still in the pan, and gently mix. Then add parsley and crushed garlic, and mix again. Place the sauce on plates. Arrange the dumplings on top of it and sprinkle them with the remaining grated cheese. Serve the dumplings while still hot.
