Yeast-Free Pizza

Traditional pizza contains yeast, but not always. Italians also prepare pizzas without yeast, using sourdough called lievito madre. The dough prepared with this sourdough is equally delicious and easier on the stomach. How to prepare yeast-free pizza using lievito madre? Let’s explore our recipe!

Ingredients

Lievito Madre Sourdough

  • Italian type 00 flour – 200 g
  • Water – 150 g
  • Honey – 10 g

Dough

  • Italian type 00 flour – 200 g
  • Sourdough starter – 80 g
  • Water – 130 ml
  • Olive oil – 15 ml
  • Salt – 5 g

Toppings

  • Pelati tomatoes – 150 g
  • Mozzarella – 80 g
  • Fresh basil – 6 leaves
  • Salt – 2.5 g

Preparation

Sourdough (skip this step if using ready-made sourdough):

Step 1: Prepare the Base In a jar, mix flour, honey, and water. Close the jar loosely, but not tightly, and leave it in a warm place for 48 hours.

Step 2: Refresh the Mixture After 48 hours, remove half of the mixture from the jar and add another 200 g of flour and 150 g of water. Mix and knead the dough into a ball, then cover and leave for another 48 hours.

Step 3: Refresh the Sourdough Again After another 48 hours, repeat the process and leave it to rise for 24 hours. When the sourdough has risen, it is ready to use.

Dough:

Step 1: Mix the Ingredients In a large bowl, mix the sourdough, olive oil, and flour, then slowly add water.

Step 2: Knead the Dough Transfer the dough onto a floured surface. Knead until all ingredients are combined. Finally, add salt and knead again. The whole process should take no more than 5 minutes.

Step 3: Let the Dough Rise Transfer the dough to a bowl, cover it with plastic wrap, and leave it in a warm place for 6-7 hours to rise.

Step 4: Shape the Dough Remove the dough from the bowl, divide it into two portions, and form them into balls. Let them rest for 30 minutes.

Step 5: Roll Out the Dough After the designated time, roll out the dough thinly for one pizza, then transfer it onto a baking stone.

Toppings:

Step 1: Prepare the Sauce Press the tomatoes through a sieve into a bowl and season with salt. Gently wash the basil.

Step 2: Prepare the Ingredients Grate the mozzarella.

Step 3: Arrange the Toppings on the Dough Spread half of the sauce over the dough, leaving a 1 cm border, then add the cheese.

Step 4: Bake the Pizza Place the pizza in the oven and bake for 10-12 minutes, until the crust rises and becomes golden. After baking, let the pizza rest for a while, then arrange basil leaves on top.
