Vietnamese Cabbage Salad

Ingredients

  • 1/2 small head of young cabbage (about 350 g)
  • 1 carrot
  • 1 young onion
  • 1 chili pepper
  • Mint leaves

For the Sauce

  • 2 cloves garlic
  • Juice from 1 lime
  • 1 tablespoon rice vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 and 1/2 tablespoons vegetable oil
  • Freshly ground pepper

Preparation

  1. Wash the cabbage, dry it, remove the core, then finely shred it and place it in a large salad bowl.
  2. Add the carrot – peeled and grated on a grater with large holes, and the young onion diced.
  3. Add the diced chili pepper without seeds and chopped mint leaves.
  4. Mix all the sauce ingredients: crushed garlic, lime juice, rice vinegar, fish sauce, sugar, oil, and freshly ground pepper. Add to the salad and mix thoroughly.
