Vegetable Wrap Sandwiches

Combine flavors and wrap them in delicious homemade tortillas! This alternative to sandwiches will banish boredom from your kitchen and allow you to incorporate more vegetables into your diet. Enjoy!

Ingredients

Homemade Tortillas

  • Water – 80 ml
  • Spelt flour – 130 g
  • Olive oil – 1 tablespoon
  • Baking powder – 1 pinch
  • Salt – 0.33 teaspoon

Vegetable Wrap Sandwiches

  • Pumpkin seeds – 2 teaspoons
  • Hummus – 100 g
  • Radish sprouts – 25 g
  • Romaine lettuce – 1 piece
  • Carrot – 1 piece
  • Cucumber – 0.5 piece
  • Olive oil – 2 tablespoons
  • Green bell pepper – 0.5 piece

Preparation

Step 1: Prepare the Tortilla Dough Mix flour, salt, and baking powder in a bowl. Add olive oil and water. Mix (by hand or using a mixer) until you get a smooth, uniform dough.

Step 2: Shape the Tortillas Transfer the dough onto a floured surface and divide it into equal portions. Roll each portion of dough into a ball, then flatten it with your hand. Cover the dough balls with a kitchen towel and let them rest for about 15 minutes.

Step 3: Bake the Tortillas Roll out each portion of dough, shaping them into round disks about 15 cm in diameter, then bake them for about 1 minute on a dry, well-heated pan. When bubbles filled with air start to appear on the surface of the dough, flip the tortilla to the other side. Bake for about 15-20 seconds.

Wrap each baked tortilla separately in damp kitchen towels to prevent them from drying out and to make them easy to roll when making the wraps.

Step 4: Assemble the Vegetable Wrap Sandwiches Spread hummus onto each tortilla and sprinkle with seeds. Layer the wrap ingredients: lettuce leaves and sliced vegetables (carrot, green pepper, and cucumber). Finally, add the sprouts. Season with salt and pepper, drizzle with olive oil. Roll the wraps tightly to enclose the vegetables inside.

If you want to present the tortillas in an aesthetic way or take them with you for lunch or a snack, wrap the wraps in sandwich paper and tie with string.
