These simple rolls with fresh vegetables are perfect as a snack or light meal. The addition of creamy peanut sauce makes them taste heavenly.

- Rice paper – 12 sheets
- Radishes – 6 pieces
- Baby spinach – 25 g
- Green bell pepper – 1 piece
- Cucumber – 1 piece
Peanut Sauce
- Plant-based yogurt – 150 g
- Peanut butter – 3 tablespoons
- Lemon juice – 1 teaspoon
- Soy sauce – 2 tablespoons

- Unsalted peanuts – 30 g
- Chives – 72 g
Preparation
Step 1: Chop the Vegetables Cut the cucumber, bell peppers, and carrots into sticks, and slice the radishes thinly.
Step 2: Moisten the Rice Paper Dampen the rice paper sheets in a bowl of lukewarm water, then lay them out one by one on a damp paper towel.
Step 3: Roll Up the Rolls Place a portion of the chopped vegetables and a few spinach leaves on one edge of a rice paper sheet, then gently roll up the rolls, enclosing the vegetables inside.
Fold the shorter edges of the rice paper towards the center halfway through rolling, then finish rolling. Repeat the process using the remaining ingredients.
Step 4: Prepare the Sauce Combine all the sauce ingredients in a blender and blend until smooth and uniform.
Step 5: Serve the Rolls Serve the rolls with the peanut sauce, sprinkling crushed peanuts on top. Garnish with chopped chives.
