Ingredients
- Spring onions – 2 pieces
- Garlic cloves – 2 pieces
- Canned corn – 150 g
- Ground coriander – 1 teaspoon
- Olive oil – 2 tablespoons
- Red chili pepper – 1 piece
- Black pepper – 1 pinch
- Tortillas – 6 pieces
- Canned chopped tomatoes – 400 g
- Salt – 1 pinch
- Vegan ground meat – 275 g
Preparation
Step 1: Fry the Onions and Garlic Dice the spring onions and sauté them in olive oil in a heated pan. Add finely chopped garlic, chopped chili pepper, and ground coriander. Mix and sauté for a while until the ingredients and flavors combine.
Step 2: Fry the Vegan Ground Meat Add the vegan ground meat and fry on each side until nicely browned.
Step 3: Add Tomatoes and Simmer the Filling Add the canned tomatoes. Season with salt and pepper. Mix and simmer for about 15-20 minutes until the liquid evaporates and the filling thickens.
Halfway through the cooking time, add the drained corn.
Step 4: Grill the Tortillas Heat the tortillas on both sides in a dry grill pan until characteristic stripes form on the surface.
Step 5: Fold and Serve the Tortillas Place a portion of the prepared filling in the center of warm tortillas. Fold the tortillas in half and then in half again to form triangles filled with the filling.
Optional: Fold the tortillas in half and then cut them in half with a sharp knife to get more portions.
