A vegan twist on a well-known dish! Prepare delicious Breton-style bean stew, seasoned with aromatic spices. A great alternative to the classic!
Ingredients
- Onion – 1 pc.
- Garlic cloves – 2 pcs.
- White beans – 150 g
- Tomato paste – 2 tablespoons
- Bay leaves – 2 pcs.
- Marjoram – 2 tablespoons
- Olive oil – 3 tablespoons
- Black pepper – 0.5 teaspoon
- Canned chopped tomatoes – 400 g
- Ground smoked paprika – 1 teaspoon
- Baking soda – 0.5 teaspoon
- Soy sauce – 1 tablespoon
- Salt – 0.5 teaspoon
- Sun-dried tomatoes – 5 pcs.
- Dried prunes – 5 pcs.
- Water – 900 ml
- Allspice – 3 pcs.
Preparation
In the bowl of the appliance, add diced onion, garlic cloves, dried tomatoes, and prunes. Blend for 5 seconds on speed 7. Scrape down the sides of the bowl with a spatula. Add olive oil. Select the sauté function and set the time to 3 minutes, speed to 1, and temperature to 110°C.
To the resulting paste, add allspice, sweet smoked paprika, bay leaves, and soy sauce. Sauté for 2 minutes, setting the time to 2 minutes, speed to 1, and temperature to 120°C. Add water and drained beans. Cook for 50 minutes. Set speed to 1 and temperature to 100°C.
Add canned tomatoes, tomato paste, marjoram, salt, and pepper to the ingredients. Cook for an additional 20 minutes or until the beans are tender. Set speed to 1 and temperature to 110°C. Adjust seasoning before serving.
