Topped with fresh organic blueberries, this chia pudding is not only visually appealing, but also delivers a burst of succulent flavour in every bite. Chia seeds are known for their high fibre content and omega-3 fatty acids, making this pudding a healthy choice that will keep you full and energised.
Ingredients:
- 1/2 cup organic blueberries
- 1 cup homemade almond milk
- 2 tablespoons organic maple syrup
- 1/2 teaspoon organic ground vanilla bean powder
- 1/4 cup organic chia seeds
Method of cooking:
If you haven’t already made your homemade almond milk, combine 1 cup of soaked almonds with 4 cups of water. Strain through a nut milk bag or fine mesh sieve to remove the pulp. Use 1 cup of this almond milk in the recipe.
In a medium bowl, combine the homemade almond milk, organic maple syrup and organic ground vanilla bean powder. Stir well to combine the ingredients.
Add the chia seeds to the almond milk mixture. Stir well to ensure that the chia seeds are evenly distributed and do not clump.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight. The chia seeds will absorb the liquid and create a thick, pudding-like consistency.
Just before serving, gently wash the organic blueberries and pat dry with kitchen paper.
Stir the chia pudding well to ensure an even texture.
Spoon the chia pudding into serving bowls or glasses.
Top each serving with the organic blueberries.
You can drizzle a little extra maple syrup over the top or add more fresh fruit or nuts to taste.
