Summer Watermelon Salad with Lemon Dressing

A refreshing combination of lettuce, fruits, olives, onion, and brie cheese. Light and very tasty dish perfect not only for summer heat.


  • 0.5 lemon
  • 0.5 red onion
  • 6 g fresh basil
  • 500 g watermelon
  • 50 ml vegetable broth
  • A pinch of black pepper
  • 60 g raspberries
  • 75 g mixed lettuce
  • 1 tablespoon olive oil
  • 60 g brie cheese
  • A pinch of salt


Clean, dry, and tear the lettuce into pieces. Pluck the basil leaves. Use a melon baller to scoop out balls from the watermelon flesh, removing seeds and collecting juice. Rinse and clean the raspberries. Transfer them to a bowl along with watermelon balls, lettuce, and basil.

Peel and finely chop the onion. Blanch the lemon, dry it, and grate the zest. Squeeze out the juice. Mix the onion with the juice collected from the watermelon, 2-3 tablespoons of lemon juice, vegetable broth, and olive oil. Season with salt and pepper. Cut the brie cheese into small cubes. Gently mix the salad with the dressing, sprinkle with brie cheese and lemon zest.
