Buffalo wings with plum BBQ sauce
Ingredients:
- Chicken wings: 1 kg
- Butter: 2 tablespoons
- Garlic: 1/2 clove
- Brown sugar: 1 tablespoon
- Honey (or maple syrup): 1 tablespoon
- Tomato sauce (or ketchup): 2 tablespoons
- Sweet paprika powder: 1 tablespoon
- Cayenne pepper (or spicy paprika): 1 teaspoon
Vegetables:
- Carrots and celery sticks
Plum BBQ sauce:
- Large tomato: 1
- Plums: 4 (can use frozen or plum jam)
- Butter: 1 tablespoon
- Garlic: 1/2 clove
- Finely grated onion: 2 teaspoons
- Brown sugar: 2 tablespoons
- Honey (or maple syrup): 1 tablespoon
- Soy sauce: 1 tablespoon
- Cayenne pepper (or hot paprika): 1/2 teaspoon
- Plum jam: 4 tablespoons
Cheese sauce:
- Blue cheese (or processed cheese): 50 g
- Garlic, finely grated: 1/3 clove
- Thick sour cream (12% – 18% fat): 80 g
- Lemon juice: 1 tablespoon
- Mayonnaise: 1 and 1/2 tablespoons
Preparation:
Cut the wings into three parts using a knife or scissors at the joints. Discard the thin tips of the wings and keep the remaining two parts. Season them with sea salt. In a saucepan, melt the butter and add finely grated garlic, bring to a boil. Cook for 15 seconds, then remove from heat, add sugar and stir until dissolved. Add the remaining ingredients: honey, tomato sauce, paprika powder, cayenne pepper.
Mix into a thick paste and let it cool. Place the wings in the saucepan with the marinade and mix well. Preheat the oven to 180°C. Place the wings in a baking dish and bake for about 70 minutes until nicely browned, stirring occasionally. Deep browning does not necessarily mean burnt, just caramelized marinade sugar. Serve the wings with sauces and vegetable sticks.
Plum BBQ sauce: Blanch the tomato, peel, chop into pieces and remove seeds with juice. Dice the remaining pulp. Dice the plums, removing the pits. In a saucepan, melt butter, finely grated garlic and grated onion, heat and bring to a boil. Sauté for a minute over low heat, then add chopped tomatoes, plums, sugar, honey, soy sauce, cayenne pepper or chili powder. Cook over high heat for about 15 minutes until the sauce is thick and glossy. Blend and mix with plum jam.
Cheese sauce: Crush the cheese finely, add garlic and mash with the remaining ingredients (the consistency doesn’t need to be perfectly smooth).
