Spanish Chocolate Orange Cake

Ingredients

Cake

  • Egg, 4 pcs
  • Brown sugar, 200 g
  • Dark chocolate, 200 g
  • Water, 60 ml
  • Cocoa powder, 30 g
  • Butter, 160 g
  • Milk, 30 ml
  • Hazelnuts, 40 g
  • Pistachios, 60 g
  • Orange juice, 30 ml
  • Orange zest, 1 tbsp

Additional

  • Powdered sugar, 15 g
  • Pistachios, 20 g

Preparation

Melt the butter in a saucepan. Dissolve the cocoa powder in hot water. Melt the chocolate in a microwave (or in a water bath), then add milk and cocoa with water. Pour in the melted butter, add sugar, coarsely chopped nuts, and egg yolks. Mix everything. Add orange juice and orange zest. Separate the egg whites from the yolks and beat until stiff peaks form, then gently fold into the chocolate mixture. Line a cake tin with parchment paper, pour in the batter, and bake for about 50 minutes at 180°C. Allow to cool, then sprinkle with powdered sugar and pistachios.
