Shrimp and Mango Sandwich

Shrimp and Mango Sandwich

For the best result, toast the sandwich in a sandwich maker after assembling.


  • 2 portions
  • 10 large shrimp
  • Marinade for shrimp: 1 tablespoon oil, 1 tablespoon lime juice, a pinch of chili flakes
  • 1/2 mango
  • 1/4 small red onion
  • Light bread, such as ciabatta or baguette
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon mayonnaise
  • A handful of arugula
  • Optional: fresh cilantro


Peel and devein the shrimp, clean, rinse, and pat dry. Coat with the marinade and let sit for about half an hour if time permits. Slice the mango and onion into thin slices. Briefly sauté the shrimp in a pan (about 1 minute on each side). Slice the bread lengthwise and spread sweet chili sauce mixed with mayonnaise on one half. On one slice, arrange arugula leaves, followed by mango and onion slices. Top with shrimp, and optionally sprinkle with fresh cilantro. Fold the sandwich and for the best result, toast it in a sandwich maker.
