Ingredients
- Onion, 1
- Honey, 3 tablespoons
- French mustard, 2 tablespoons
- Apple cider vinegar, 100 ml
- Red pepper, 1
- Raspberry tomatoes, 400 g
- Grated lemon zest, 1 tablespoon
- Lemon juice, 25 ml
- Salt, a pinch
Preparation
Step 1: Caramelize the Honey
Pour the honey into the bottom of a heated pan and heat it, without stirring, until it starts to foam gently. To spread the caramelized honey over the entire surface of the pan, move it – do not use wooden spatulas, do not touch the caramel.
Step 2: Cook the Confiture
Add finely chopped onion. Sauté for a while. Add the pepper, mustard, and grated lemon zest. Mix. Add tomatoes chopped into small cubes. Mix again. Pour vinegar over everything. Cook, stirring occasionally, until the liquid evaporates and the confiture thickens slightly.
Tip! Hot confiture may have a slightly thinner consistency, which will change after cooling due to the action of the sugar contained in the honey.
Towards the end of cooking, add the lemon juice.
Step 3: Transfer the Confiture to a Jar
Transfer the finished confiture to a thoroughly washed, scalded, and dried jar. Close the jar tightly and place it upside down on a cloth.
