Dill Poached Salmon

Salmon is a favourite fish in many households. It’s healthy and perfect for dinner. It tastes best with rice.

Ingredients:

  • 4 (4 oz) salmon fillets
  • 2 cups chicken stock
  • 1 bunch of fresh dill, tied with kitchen string

Method of preparation:

In a large saucepan or frying pan, bring the chicken stock to a simmer over medium heat.

When the chicken stock is simmering, carefully add the tied bunch of fresh dill to the pan.

Carefully add the salmon fillets to the pan, making sure they are submerged in the liquid.

Reduce the heat to low and cover the pan with a lid. Poach the salmon in the dill-infused broth for about 8-10 minutes, or until cooked through and flakes easily with a fork.

When the salmon is cooked, carefully remove the fillets from the pan with a slotted spatula or spoon and transfer to serving plates.
