A tasty salad is a must for any lunch or dinner. Purple cabbage salad is not only healthy, but also very aesthetic.
Ingredients:
- 2 1/2 cups shredded red cabbage
- 1 (10 ounce) can mandarin oranges, drained
- 1 spring onion, chopped
- 1/4 cup dried cranberries, sweetened
- 1/4 cup pine nuts
- 1/3 cup canola oil
- 1/4 cup vinegar
- 1 tablespoon white sugar
- 2 pinches of salt
Method of preparation:
In a large mixing bowl, combine the shredded red cabbage, drained mandarin oranges, chopped scallions, sweetened dried cranberries and pine nuts.
In a small bowl, whisk together the canola oil, vinegar, white sugar and salt until well combined.
Pour the dressing over the cabbage mixture in the large bowl and toss to coat evenly.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavours to meld.
Before serving, give the salad a final toss to redistribute the dressing and toppings.
Serve chilled as a refreshing side dish or as a light lunch.
