Roasted Chicken with Apples and Raisins

Ingredients

  • Chicken – 1 whole
  • Honey – 4 tablespoons
  • Olive oil – 2 tablespoons
  • Sweet paprika – 0.5 teaspoon
  • Raisins – 30 g
  • Dried rosemary – 0.5 teaspoon
  • Salt – a pinch
  • Dried marjoram – a pinch
  • Apple juice – 125 ml
  • Garlic clove – 1 piece
  • Red apple – 4 pieces

Preparation

Wash and dry the chicken, including the cavity. Rub with olive oil, salt, garlic, honey (2 tablespoons), and spices. Peel the apples and cut them into quarters; set aside 10 pieces, mix the rest with raisins and the remaining 2 tablespoons of honey. Place the chicken in an ovenproof dish, stuff the cavity with apples with honey and raisins, and arrange the remaining apples around the chicken. Sprinkle the apples with marjoram. Pour the apple juice into the bottom of the dish. Place the chicken in an oven preheated to 190°C and roast for about 1.5 hours (1 hour for every kilogram of chicken).
