A simple recipe for delicious rice pudding. The recipe can be freely adapted to your preferences.
Ingredients
Rice pudding
- Rice (regular, arborio, or jasmine), 1/2 cup (100 g)
- Milk, 2 1/2 cups
- Butter, 1/2 tablespoon
- Salt, a small pinch
- Raisins, 2 tablespoons
- Vanilla sugar, 16 g (1 packet)
Caramelized pears/apples
- Pears or apples, 2
- Lemon juice, 1 tablespoon
- Sugar, 3 tablespoons
Preparation
Rice pudding: In a medium saucepan, add rice, milk, butter, salt, and raisins. Stir and bring to a boil, stirring occasionally. Then cook uncovered for about 18 minutes, stirring occasionally, until the rice is soft (cooking time may vary slightly depending on the type of rice).
At the end, season with vanilla sugar. Over time (with longer cooking or during cooling), the pudding will thicken more.
Caramelized pears/apples: Peel the pears or apples, remove the cores, cut into cubes, drizzle with lemon juice, mix, and set aside.
In a heavy-bottomed saucepan, sprinkle the sugar, spread it evenly on the bottom, and heat over medium heat for about 2 – 3 minutes or until the sugar browns (reaches a brown color, but not black). Then add the pears with juice (be careful, it will splatter) or apples and mix by shaking the pan.
Return to the heat and cook for about 2 – 3 minutes until the fruit softens, partially breaks down, and a thick caramel syrup forms.
