Recipe for Fat-Free Fruit Cake with Plant-Based Milk

Ingredients

  • Brown sugar – 50 g
  • Cinnamon – 1 teaspoon
  • Lemon – 1 piece
  • Egg – 2 pieces
  • Whole wheat flour – 110 g
  • Ground cardamom – 0.5 teaspoon
  • Plant-based milk – 75 ml
  • Baking powder – 2 teaspoons
  • Raspberries – 35 g
  • Salt – a pinch

Preparation

Step 1: Creaming Eggs with Sugar Line a cake tin with parchment paper. Beat the eggs with sugar and lemon zest for 5 minutes. When fluffy, add alternately plant-based milk and sifted flour with cinnamon, cardamom, a pinch of salt, and baking powder.

Step 2: Mixing All Ingredients Mix everything for a minute. Add half of the prepared fruits and mix. Pour the batter into the tin. Place the remaining half of the fruits on top. Bake for 35 minutes. Check with a toothpick if it’s baked through. Sprinkle with powdered sugar when cooled.
