Italian cuisine is characterized by simplicity and a love for good, natural ingredients. Therefore, it’s no surprise that Italians make use of everything nature has to offer (such as mushrooms) and use them to prepare exquisite pastas and dumplings. We have prepared a recipe for ravioli with mushrooms that will transport you with its taste to the carefree forests of Italy. Enjoy the read!
Ingredients
For the Dough
- Durum wheat flour – 340 g
- Egg – 2 pcs.
- Olive oil – 15 ml
- Salt – 0.8 g
For the Filling
- Wild mushrooms – 200 g
- Parmesan cheese – 100 g
- White wine – 60 ml
- Onion – 1 pc.
- Garlic clove – 2 pcs.
- Salt – 1 g
- Black pepper – 0.5 g
- Parsley – 0.5 g
For the Sauce
- Grated Parmesan – 70 g
- Wild mushrooms – 60 g
- Butter – 50 g
- Grated lemon zest – 1.2 g
- Salt – 1.5 g
- Black pepper – 1 g
Preparation
Dumplings: Step 1: Prepare the Ingredients Sift the flour into a large bowl, then add salt and mix.
Step 2: Add the Remaining Ingredients Crack the eggs into the bowl, then add olive oil and gently mix all the ingredients until they form a somewhat uniform mass.
Step 3: Making the Dough Start kneading the dough. Knead it until smooth. If it’s too dry, add a little water, and if it’s too sticky, add a little flour.
Step 4: Form the Dough Place the dough on a floured work surface and knead it some more. When it’s firm enough, shape it into a ball and wrap it in plastic wrap. Let the dough rest for at least half an hour.
Step 5: Cutting and Forming Ravioli Unwrap the dough and roll it out thinly. Cut rectangles from the dough, then lightly mark a line down the middle of each one, creating two squares. This will make it easier for you to fill the ravioli later.
Filling: Step 1: Prepare the Ingredients Peel and finely chop the onion and garlic. Clean the mushrooms thoroughly, you can gently soak them and then dry them. Chop the dried mushrooms into cubes.
Step 2: Fry the Ingredients Heat butter in a pan, then add onion and garlic. Fry until golden brown. Then add the mushrooms and fry until the water evaporates.
Step 3: Add the Remaining Ingredients Once the water from the mushrooms has evaporated, add wine and spices. Mix everything and wait until the water evaporates again. Chop the parsley and add it along with the Parmesan to the rest of the ingredients. Let the filling fry for a few more minutes, then set it aside to cool.
Step 4: Stuff the Ravioli Fill each dumpling with the prepared filling, placing about a spoonful of filling in the center of one of the previously marked squares. Fold the rectangle in half and seal the edges of the ravioli. You can decorate them with a fork by gently pressing it into the edges of the dumpling.
Step 5: Cook the Ravioli In a pot of salted boiling water, add the ravioli and cook them for 2-3 minutes, then drain a bit of the water. Pour out the rest of the water and set aside the drained ravioli.
Sauce: Step 1: Prepare the Mushrooms Wash and clean the mushrooms, then slice them.
Step 2: Fry the Ingredients In a saucepan, melt the butter, then add lemon zest. After a moment, add the mushrooms and wait until they release their water. When the mixture reduces, add the water from cooking the ravioli.
Step 3: Season the Sauce To the slightly reduced sauce, add Parmesan, pepper, and salt, and mix. Cook for 1-2 minutes.
Step 4: Add the Ravioli Add the ravioli to the saucepan and mix. Let them simmer for 2 minutes.
Step 5: Serve the Dumplings Transfer the finished dish to plates and serve with grated Parmesan or parsley.
