Raspberry Souffle

A souffle can have many flavors! With this original recipe, you’ll delight all your guests and household members.

Ingredients

  • Powdered sugar – 1 teaspoon
  • Brown sugar – 45 g
  • Eggs – 3 pieces
  • Raspberries – 150 g
  • Butter – 1 teaspoon
  • All-purpose flour – 1 tablespoon
  • Baking powder – 0.25 teaspoon
  • Water – 30 ml

Additionally

  • Powdered sugar – 2 teaspoons
  • Raspberries – 60 g

Preparation

Step 1: Boil the Raspberries In a small saucepan, bring the crushed raspberries to a boil. Combine flour with brown sugar and water. Pour into the boiling raspberries. Bring to a boil, stirring vigorously. Set the mixture aside to cool.

Step 2: Combine the Raspberry Mixture with Whipped Egg Whites Separate the egg yolks from the whites. Add the egg yolks to the cooled raspberry mixture and mix well. Whip the egg whites with powdered sugar until stiff peaks form. Add them to the raspberry mixture and mix. Finally, add the baking powder.

Step 3: Bake the Souffle Thoroughly grease the cups with butter and dust with powdered sugar. Transfer the mixture into the cups, filling them up to ¾ of their height. Bake the soufflé in an oven preheated to 180°C for 13-15 minutes. Serve immediately with raspberries and powdered sugar on top.
