Ingredients:
- 2 large flour tortillas
- 1 cup cooked chicken, shredded or diced
- 1 cup shredded cheese (cheddar, monterey jack or a mix)
- 1/4 cup diced bell peppers (any colour)
- 2 tablespoons diced onions
- 1/4 cup salsa
- 2 tablespoons sour cream (optional)
- cooking spray or butter to grease the pan
Method of making:
Heat a large frying pan or griddle over medium heat.
Place a tortilla in the pan and sprinkle half of the shredded cheese evenly over the top.
Spread the cooked chicken, diced peppers and onions evenly over the cheese.
Pour the salsa over the top and spread evenly.
Sprinkle the remaining shredded cheese over the salsa.
Place the second tortilla on top to cover the filling and press down gently.
Cook the quesadilla for 3-4 minutes on each side or until golden brown and crisp and the cheese is melted.
Remove from the pan and leave to cool for a minute before slicing into wedges.
Serve hot with a dollop of sour cream on the side if you like.
