An exceptional version of a hot dog, the pretzel dog! A delicious snack with pork sausage and German cheese, perfect for both parties and picnics.
Ingredients
Dough
- Water – 750 ml
- Dry yeast – 7 g
- Sugar – 1 teaspoon
- Salt – 1 teaspoon
- All-purpose flour – 650 g
- Lard – 55 g
- Olive oil – 1 tablespoon
Dough Bath
- Water – 2.5 l
- Baking soda – 100 g
Filling
- Pork sausages – 15 pieces
- Wiesenlander cheese – 15 slices
Additional
- Egg yolk – 1 piece
- Water – 1 tablespoon
- Coarse salt – 2 teaspoons
Preparation
Step 1: Prepare the Starter In a bowl, combine water, yeast, sugar, and salt. Set aside for about 5 minutes until it foams lightly.
Step 2: Knead the Dough In the bowl of a stand mixer, add flour, melted lard, and the starter. Knead the dough for about 10 minutes until it becomes smooth and uniform.
Step 3: Shape the Dough Shape the dough into a ball by hand and transfer it to an oiled bowl. Cover with a cotton cloth and let it rise for at least 1 hour.
Step 4: Shape the Pretzel Dogs Once risen, knead the yeast dough again and divide it into 15 equal pieces. Roll each piece into a log about 50-60 cm long. Wrap each sausage with cheese, then with dough, making sure they stick together.
Step 5: Cook the Pretzel Dogs Bring 2.5 liters of water mixed with baking soda to a boil. Add the formed pretzel dogs and boil them for about 30 seconds. Transfer the partially cooked snacks immediately onto a baking sheet lined with parchment paper. Brush each pretzel dog with beaten egg yolk mixed with a tablespoon of water and sprinkle with salt.
Step 6: Bake and Serve the Pretzel Dogs Bake the prepared snacks for about 10 minutes in an oven preheated to 230°C. Serve them slightly cooled but still warm.
