Pork Medallions with Sun-Dried Tomatoes

Juicy pork rolls with aromatic tomato-herb stuffing are a recipe for delicious meat in an Italian style.


  • Fresh basil – 12 g
  • Garlic cloves – 2 pieces
  • Olive oil – 1 tablespoon
  • Black pepper – a pinch
  • Pork tenderloin – 500 g
  • Salt – a pinch
  • Sun-dried tomatoes – 220 g


Slice the pork tenderloin into 1.5-2-centimeter slices, gently flatten each one into a larger piece, sprinkle with salt and pepper.

Cut the sun-dried tomatoes into smaller pieces, and slice the garlic. Place a piece of tomato, a few basil leaves, and a few garlic slices on each slice of pork. Gently roll up each pork slice filled with ingredients and secure with a toothpick.

Heat the olive oil in a pan, sear the pork medallions. Then transfer the meat to a baking sheet or ovenproof dish and place it in an oven preheated to 200°C for about 15 minutes.
