Ingredients
- Jasmine rice: 0.5 cup
- Tofu: 90 g
- Soy sauce: 2 teaspoons
- Sesame oil: 2 teaspoons
- Maple syrup: 1 teaspoon
- Ground ginger: 0.5 teaspoon
- Oil: 1 tablespoon
- Fresh spinach: 2 handfuls
- Pineapple: 2 slices
- Red onion: 0.25 piece
- Avocado: 0.5 piece
- Black sesame seeds: 1 tablespoon
Preparation
Step 1: Marinate the Tofu Cut the tofu into 1 cm cubes. In a bowl, mix soy sauce, sesame oil, maple syrup, and ground ginger. Add the cubed tofu to the marinade and refrigerate for at least a few hours, preferably overnight.
Step 2: Cook the Rice Rinse the rice under cold water using a sieve. Cook the rinsed rice in salted water according to the package instructions.
Step 3: Prepare the Bowl Ingredients Dice the pineapple and avocado into cubes similar in size to the tofu. Slice the red onion into thin strips.
Step 4: Saute the Ingredients Saute the marinated tofu in heated oil until lightly browned on both sides. In a separate pan, wilt the spinach over medium heat for a few minutes.
Step 5: Assemble and Garnish the Poke Bowl Place the cooked rice at the bottom of a bowl. Arrange the tofu, sauteed spinach, pineapple, avocado, and red onion on top. Sprinkle with black sesame seeds before serving.
