Ingredients
Creme Brulee:
- Pineapple – 300 g
- Sugar – 60 g
- Coconut milk – 80 g
- Heavy cream (30% fat) – 300 g
- Eggs – 4 pcs.
Decoration:
- Brown sugar – 60 g
- Fresh mint – 2 tbsp
Preparation
Step 1: Prepare the Custard:
- Peel and dice the pineapple, removing the tough core. Arrange half at the bottom of 4 ramekins.
- Heat the heavy cream and coconut milk to around 80°C (do not bring to a boil).
- Gently whisk the egg yolks with the sugar. Gradually add the warmed cream mixture while whisking continuously. Mix thoroughly to combine.
- Strain the mixture through a sieve, then pour into the ramekins.
Step 2: Bake the Dessert:
- Place the ramekins on a baking sheet. Pour warm water into the baking dish to reach 2/3 up the sides of the ramekins. Bake in a preheated oven at 100°C for approximately 25 minutes.
- Remove from the oven, cool, and refrigerate until thoroughly chilled.
Step 3: Serve the Dessert:
- Sprinkle the top of each custard with brown sugar and caramelize using a kitchen torch.
- Serve with additional pineapple pieces and mint leaves.
