Ingredients
- 1 fish, approximately 1/2 kg (such as sea bass, baramundi, dorado, trout), whole or cleaned
- Salt and freshly ground pepper
- 1/2 lemon
- 1 clove garlic
- A few sprigs of parsley and/or fresh herbs (e.g., oregano, thyme, rosemary)
- 1 tablespoon olive oil
Optional Sides:
- Garlic-herb toast
- Mixed green salad with vinaigrette
Preparation:
- Preheat the grill to medium heat. Rinse the fish and pat it dry thoroughly. Make a few cuts on each side of the fish, about 0.5 cm deep.
- Season the outside and inside of the fish with salt and pepper. Place 2 lemon slices, half a garlic clove (cut), and sprigs of parsley and/or herbs inside the cavity. Drizzle with olive oil.
- Place the fish directly on the preheated grill or in a grill basket that has been brushed with oil from the inside. Grill the fish for 3.5 to 4 minutes on each side. Cooking longer than necessary will dry out the meat.
- Serve the grilled fish immediately, squeezing the remaining lemon over it.
