Passion fruit curd

Passion Fruit Curd is a fantastic addition to desserts, cupcakes, and flaky tarts. Its exotic flavor gives sweetness a unique character.


  • Sugar – 165 g
  • Egg – 1 pc.
  • Butter – 100 g
  • Passion fruit – 170 g
  • Salt – a pinch
  • Eggs – 4 pcs.


Melt the butter in a saucepan along with the pulp from the passion fruit and salt. In a bowl, whisk sugar, egg yolk, and whole egg for a while. Remove the saucepan with the butter from the heat and gradually add a few spoonfuls of the mixture to the beaten eggs, continuously whisking. Repeat until both mixtures are combined.

Pour the entire mixture back into the saucepan and cook over medium heat, stirring constantly. Cook for about 5-8 minutes until the mixture thickens and reaches a custard-like consistency. Transfer the cooked mixture into a jar and cover it with foil to prevent a skin from forming. Chill in the fridge for at least 2 hours.
