Nutty Chicken Satay Strips

Chicken is a great source of lean protein and the cucumber provides a refreshing and healthy side dish. Not only is this dish delicious, it is also good for you! You can easily adapt this recipe to suit your tastes. If you prefer a hotter marinade, add more chilli. If you don’t like peanut butter, try almond butter or tahini.

Ingredients:

  • 2 tablespoons chunky peanut butter (no palm oil or sugar)
  • 1 clove of garlic, finely grated
  • 1 teaspoon madras curry powder
  • A few dashes of soy sauce
  • 2 tsp lime juice
  • 2 skinless chicken breast fillets (about 300g) cut into thick strips
  • About 10cm cucumber, cut into fingers
  • Sweet chilli sauce, to serve

Method of preparation:

Make the marinade: In a bowl, combine the peanut butter, grated garlic, curry powder, soy sauce and lime juice. Stir until well combined.

Marinate the chicken: Add the chicken strips to the marinade, making sure they are completely coated. Cover and leave to marinate in the fridge for at least 30 minutes, or overnight if time allows.

Cook the chicken: Preheat your barbecue or grill. Thread the chicken strips onto skewers and grill for 3-4 minutes on each side or until cooked through and slightly charred.

Serve: Serve the chicken satay strips with the cucumber fingers on the side. Drizzle with sweet chilli sauce for extra flavour.
