Easy Mexican Quinoa

Quinoa

A healthy blend of fluffy quinoa and a vibrant mix of corn and black beans, this dish brings the essence of Mexican flavours to your table. It’s an effortless, healthy side dish that pairs perfectly with any meal, offering a touch of simplicity and nutrition. Ideal for busy days or when you crave a taste of Mexico.

Ingredients:

  • 2 cups of water
  • 1 cup quinoa
  • 1 (12 oz) package frozen corn and black bean mix

Method of preparation:

Rinse the quinoa under cold water in a fine-mesh sieve to remove its natural coating, called saponin, which can make it taste bitter or soapy.

Bring 2 cups of water to a boil in a medium saucepan.

Add the rinsed quinoa to the boiling water, reduce the heat to low, cover and simmer for 15 minutes.

While the quinoa is cooking, microwave the corn and black bean mix according to the package instructions.

When the quinoa is done (it should be fluffy and the water absorbed), remove from the heat and leave covered for 5 minutes.

Fluff up the quinoa with a fork and gently stir in the corn and black bean mixture.

Serve warm as a side dish or as a base for a main course. You can also add your favourite Mexican spices, lime juice and fresh coriander for extra flavour.
