Cod with Lemon, Garlic and Chives


Experience the light and refreshing taste of the sea with Cod with Lemon, Garlic and Chives. This dish is a harmonious blend of delicate cod fillets, brightened by the zest of lemon and the aromatic punch of garlic and chives.


  • 4 (6oz) cod fillets
  • 4 teaspoons olive oil
  • Salt and black pepper to taste
  • 1 bunch of fresh chives, roughly chopped
  • 2 lemons, sliced
  • 2 cloves of garlic, sliced

Method of preparation:

Preheat the oven to 400 degrees F (200 degrees C).

Cut 4 large squares of heavy duty aluminium foil.

Brush each fillet with olive oil and sprinkle with salt and black pepper.

Place each fillet in the centre of a square of foil.

Place lemon slices down the length of each fillet and sprinkle with garlic slices and chives.

Fold the foil over the fish and turn the edges over 2 or 3 times; flatten to seal the packs.

Bake in the preheated oven until the fish is opaque and flakes easily with a fork, about 15-20 minutes.
