Mexican Black Bean Tostadas are a quick and delicious meal that combines crispy tostadas with savoury black beans and melty cheese, topped with fresh avocado slices and a splash of hot sauce. This simple yet flavourful dish is perfect for a quick weeknight dinner or a fun weekend lunch.
Ingredients:
- 2 (15oz) cans of black beans, rinsed and drained
- 8 tostadas
- 2 cups shredded pepper jack cheese
- Avocado, sliced
- Hot sauce
Method of cooking:
Preheat the oven to 175°C (350°F).
In a medium saucepan over medium heat, add the rinsed and drained black beans.
Cook, stirring occasionally, until the beans are heated through, about 5-7 minutes. You can mash some of the beans with the back of a spoon if you prefer a thicker consistency.
Place the tostadas on a baking tray.
Divide the heated black beans evenly between the tostadas, spreading them evenly.
Sprinkle the shredded pepper jack cheese over the black beans on each tostada.
Place the baking sheet in the preheated oven and bake until the cheese is melted and bubbly, about 5-7 minutes.
While the tostadas are baking, slice the avocado.
Remove the tostadas from the oven.
Top each tostada with avocado slices.
Drizzle with hot sauce to taste.
