Risotto is one of the more representative dishes of Italian cuisine, with fans all over the world. Its creamy consistency and the possibility of creating new flavor combinations make it exceptional. Ingredients
- Bone broth – 900 ml
- Ground pork – 300 g
- Arborio rice – 250 g
- Parmesan cheese – 100 g
- White wine – 100 ml
- Carrots – 2 pieces
- Zucchini – 1 piece
- Butter – 40 g
- Olive oil – 60 ml
- Salt – 2.5 g
- Black pepper – 1.5 g
- Ground smoked paprika – 1 g
- Parsley – 0.5 bunch
Preparation
Step 1: Prepare the Ingredients Peel and finely chop the onion and garlic. Peel and dice the carrots. Wash the zucchini and cut it into half-moons.
Step 2: Sauté the Ingredients Pour olive oil (about 20 ml) into a pan, then add the garlic and onion. Sauté for 3-4 minutes, then add the carrots and zucchini. Season with salt and pepper. Allow the vegetables to fry until they achieve a golden color, then transfer them to a bowl. Wash and dry the pan.
Step 3: Sauté the Meat Place the pan back on the stove and pour olive oil (about 30 ml) onto it. Once it starts sizzling, add the meat and sauté for a while. Wait until it releases its juices, then add salt, pepper, and 1 g of smoked paprika. Remove the browned meat from the heat and set it aside.
Step 4: Prepare the Base for Risotto In a dry saucepan, toast the rice for a minute, then add the remaining olive oil. Once the rice starts to become translucent, it’s time to add the vegetables from the bowl. Sauté everything for 2-3 minutes, then add the wine and wait until it’s almost completely reduced. In another pot, heat the broth until it boils.
Step 5: Add the Meat and Ladle the Broth Add the meat to all the ingredients in the saucepan, then start ladling the broth. Scoop with a ladle, pour, and then mix thoroughly. Repeat this process until you’ve added all the broth. Remember to keep stirring the ingredients constantly to prevent them from burning.
Step 6: Finish the Risotto Chop the parsley and add it to the risotto, then mix. Towards the end of cooking, add the butter and Parmesan cheese. Mix everything until you achieve a smooth and creamy consistency. Transfer the prepared risotto to deep plates and it’s ready to serve!
