Liège Style Salad

Ingredients:

  • 2lb potatoes, peeled and cubed
  • 2 lbs fresh green beans, trimmed and cut into 1 1/2 inch pieces
  • 1 pound thick-cut bacon
  • 3 small onions, sliced
  • 2 cups balsamic vinegar
  • Salt and pepper to taste

Method of preparation:

Boil the potatoes and green beans: In a large saucepan of boiling salted water, cook the potatoes until tender but still firm, about 10-15 minutes. Add the green beans and cook for a further 5 minutes. Drain and set aside.

Cook the bacon and onions: In a large frying pan, cook the bacon over a medium heat until crisp. Remove the bacon from the pan, leaving the drippings in the pan. Add the onions to the pan and cook until soft and golden.

Make the dressing: Add the balsamic vinegar to the pan with the onions, scraping the bottom of the pan to loosen any browned bits. Bring to the boil, then reduce the heat and simmer until the vinegar has been reduced by half.

Toss the salad: In a large bowl, combine the cooked potatoes and green beans, cooked bacon and onion-vinegar mixture. Toss well to combine. Season to taste with salt and pepper.

Serve: This salad can be served warm or you can let it cool and serve at room temperature. Either way, it’s delicious!
