Leek Soup with Ground Meat

Delicious leek soup straight from Polish cuisine. Prepare a healthy and tasty soup that will delight any food enthusiast.

Ingredients:

  • 250 g ground pork (e.g., from ham)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 250 g leeks
  • 1/3 teaspoon turmeric
  • 1/3 teaspoon sweet paprika
  • 1 liter broth (vegetable or chicken)
  • 400 g potatoes
  • 60 ml 18% cream
  • Fresh herbs

Preparation:

  1. In a large pot, heat olive oil and butter. Brown the ground pork thoroughly, seasoning with salt and pepper.
  2. Trim the toughest green ends from the leeks. Cut the white and light green parts lengthwise and rinse thoroughly under water. Chop finely on a cutting board and add to the pot with the browned meat. Sauté for a few minutes until the leeks soften, stirring occasionally.
  3. Add turmeric and sweet paprika.
  4. Pour in the broth and bring to a boil. Cover and simmer for about 10 minutes.
  5. Peel and dice the potatoes, then add them to the soup. Cover and cook for another 15 minutes until the potatoes are tender.
  6. Finally, stir in the cream and fresh herbs. Remove from heat and serve hot.
