Kinder Country Cake

A no-bake cake reminiscent of Kinder Country bars. It consists of two layers of crispy crackers, mascarpone cheese with white chocolate mixed with cereal flakes, and topped with milk chocolate icing. Quick to make, it’s delicious even after just an hour of chilling!

Ingredients:

  • 100 g crackers
  • 250 g mascarpone
  • 350 ml 30% cream
  • 200 g white chocolate
  • 200 g milk chocolate
  • 3 cups breakfast cereal flakes

Preparation:

Mascarpone and cream should be cold and chilled. Line the bottom of a 24-26 cm diameter cake tin with a layer of crackers.

Whip mascarpone and 250 ml of cream together with a mixer until thick and fluffy (about 2 minutes, until tripled in volume).

Break the white chocolate into pieces and melt it. Place the melted chocolate in a larger bowl and add 2-3 tablespoons of the whipped cream. Mix, then add another 2-3 tablespoons of cream and mix again. Continue adding larger portions of the cream and mix until combined.

Add 2 cups of cereal flakes to the mixture and mix well. Spread evenly over the layer of crackers in the tin and cover with another layer of crackers.

Heat the remaining cream (100 ml) in a saucepan until hot, then remove from heat. Add the milk chocolate, broken into pieces, and stir until melted.

Spread the chocolate mixture over the cake and sprinkle with the remaining cereal flakes. Place in the refrigerator and chill for about 3 hours.
