Fig and Ricotta Sandwich

With pine nuts and lemon-vanilla honey


Sandwich with Fig and Ricotta:

  • 100 g ricotta cheese (homemade quick version or store-bought)
  • 2 fresh figs, sliced
  • 3 tablespoons pine nuts
  • Good quality bread, e.g., brioche, challah, or any preferred bread
  • Butter for spreading

Lemon-Vanilla Honey:

  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Pinch of lemon zest (optional)
  • Seeds from 1/2 vanilla bean


Mix honey with lemon and vanilla in a bowl. Lightly toast the pine nuts in a pan.

Spread butter on the bread slices (you can toast them if desired). Then spread ricotta cheese on top, arrange fig slices, and sprinkle with pine nuts.

Drizzle with lemon-vanilla honey.
