Ingredients – hamburger buns

  • Butter – 50 g
  • Milk – 270 ml
  • Sugar – 1 teaspoon
  • Fresh yeast – 20 g
  • Spelt flour – 550 g
  • Salt – 1 teaspoon
  • Egg – 1 piece

Additionaly

  • Wheat flour – 1 tablespoon
  • Egg yolk – 1 piece
  • Milk – 1 tablespoon
  • Sea salt – 1 tablespoon
  • White sesame seeds – 1 tablespoon

Preparation

Place chopped butter into a mixing bowl, add milk and sugar. Heat (without measuring cup) for 3 minutes/speed 1/37°C. Crumble yeast into warm milk and mix (without measuring cup) for 2 minutes/speed 1/37°C. Attach the measuring cup to the lid. Set the starter aside for 2 minutes.

Add flour, salt, and egg to the starter. Knead (with the measuring cup attached) using the knead program/2 minutes. Lightly dust the inside of a bowl with flour and place the dough in it. Sprinkle with flour, cover, and let it rise for 30 minutes in a warm place until doubled in size.

Preheat the oven to 200°C. Place parchment paper on a baking sheet. Knead the risen dough again on a floured surface and shape it into 8 buns. Place them on the baking sheet, cover with a kitchen towel, and let them rise for another 10 minutes.

Meanwhile, mix egg yolk with milk and brush the buns with it. Sprinkle with sesame seeds, salt, or poppy seeds. Bake on the middle rack of the oven for 25 minutes until golden brown. Allow the buns to cool completely before using them.
