Herring Tartare with French Mustard

A perfect tartare made from marinated herring – a quick and tasty appetizer idea.

Ingredients

  • Honey – 1 teaspoon
  • Red chili pepper – 1 piece
  • Pickled cucumber – 2 pieces
  • Spring onion – 1 piece
  • Fresh dill – 25 g
  • French mustard – 3 tablespoons
  • Olive oil – 20 ml
  • Matjes herring – 500 g
  • Lime – 2 pieces
  • Salt – 1 pinch
  • Black pepper – 1 pinch

Preparation

  1. Wash the herring fillets, pat them dry with a paper towel, then dice them (about 0.5 x 0.5 cm). Transfer the diced herring to a bowl, add the juice and zest of one lime, mix well, and refrigerate to marinate.
  2. Finely dice the spring onion and pickled cucumbers (preferably twice as small as the herring cubes), and finely chop the red chili pepper and dill. Add them to the marinated herring. Then add French mustard, honey, olive oil, and season with freshly ground black pepper and salt. Mix all the ingredients thoroughly.
  3. Place the tartare on plates and garnish with sour cream and dill.
