Hearty Pasta Soup

This Hearty Pasta Soup is the perfect comfort food. It’s warm, filling and packed with healthy ingredients. It’s just what you need on a cold day or when you need a comforting meal. It makes great leftovers. You can make a big batch and enjoy it for several meals throughout the week.

Ingredients:

  • 1 tablespoon olive oil
  • 2 carrots, chopped
  • 1 large onion, chopped
  • 1l vegetable stock
  • 400g tin of chopped tomato
  • 200g frozen mixed peas and beans
  • 250g packet of fresh stuffed tortellini (we used spinach and ricotta)
  • handful of basil leaves (optional)
  • grated parmesan (or vegetarian alternative), to serve

Method of preparation:

Heat the olive oil in a large saucepan over a medium heat. Add the chopped carrots and onion and cook until soft.

Add the vegetable stock and chopped tomatoes and bring to the boil.

When it boils, add the frozen peas and beans. Reduce the heat to low and allow the soup to simmer for about 10 minutes.

Add the tortellini to the pot and cook according to the packet instructions (usually 2-3 minutes).

If using, tear the basil leaves and stir into the soup just before serving.

Pour the soup into bowls and sprinkle with the grated parmesan.
