It has long been known that fish dishes are much healthier than pork or beef. Halibut is particularly appreciated by gourmets. It has a delicate flavour and can be prepared in many different ways.
Ingredients:
- 4 halibut fillets (about 6oz each)
- salt and freshly ground black pepper
- olive oil, for brushing
For the basil and shallot butter
- 1/2 cup (1 stick) unsalted butter, softened
- 2 tablespoons fresh basil leaves, finely chopped
- 1 tablespoon minced shallots
- 1 teaspoon lemon juice
- salt and freshly ground black pepper to taste
Method of preparation:
Preheat your barbecue to medium heat.
Season the halibut fillets generously on both sides with salt and pepper.
Brush the grill grids with olive oil to prevent sticking.
Place the halibut fillets on the grill and cook for approximately 4-5 minutes per side, or until the fish is opaque and flakes easily when tested with a fork. The cooking time will vary depending on the thickness of the fillet.
While the halibut is grilling, make the basil and shallot butter. In a small bowl, combine the softened butter, chopped basil, chopped shallots, lemon juice, salt and pepper. Mix well.
When the halibut is cooked through, remove from the grill and transfer to serving plates.
Top each halibut fillet with a generous dollop of the basil shallots butter.
