Grilled Zucchini in Garlic Marinade

A tasty addition to grilled meats or a great ingredient for pasta and salads.


  • 1 large zucchini
  • 2 cloves of garlic
  • 1/4 cup olive oil
  • sea salt and freshly ground black pepper


  1. Blend garlic with olive oil, salt, and pepper in a blender until smooth.
  2. Cut the zucchini into 4 parts and lightly score each piece with a fork.
  3. Thoroughly coat each piece of zucchini with the prepared marinade and let it sit for 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Place the zucchini pieces with the marinade on the grill grate and grill for about 10 minutes on each side until the zucchini is lightly browned, tender but still firm.
