A tasty addition to grilled meats or a great ingredient for pasta and salads.
Ingredients:
- 1 large zucchini
- 2 cloves of garlic
- 1/4 cup olive oil
- sea salt and freshly ground black pepper
Preparation:
- Blend garlic with olive oil, salt, and pepper in a blender until smooth.
- Cut the zucchini into 4 parts and lightly score each piece with a fork.
- Thoroughly coat each piece of zucchini with the prepared marinade and let it sit for 30 minutes.
- Preheat the grill to medium-high heat.
- Place the zucchini pieces with the marinade on the grill grate and grill for about 10 minutes on each side until the zucchini is lightly browned, tender but still firm.
