Not much time to prepare a side dish for dinner? Or maybe you are preparing a party in the garden and would like to try an original barbecue dish? Grilled sweet potatoes would be perfect.
Ingredients:
- for the grilled sweet potatoes
- 2 large sweet potatoes, scrubbed and cut into 1/2 inch slices
- 2 tablespoons olive oil
- salt and freshly ground black pepper
For the charred scallion mayo
- 1 bunch scallions (green onions)
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- salt and freshly ground black pepper
Method of preparation:
Preheat the grill to medium heat.
In a large bowl, toss the sweet potato rounds with the olive oil, salt and pepper until evenly coated.
Place the sweet potato rounds on the grill and cook for about 4-5 minutes per side, or until tender and grill marks appear. The cooking time will vary depending on the thickness of the rounds.
While the sweet potatoes are grilling, prepare the charred spring onion mayo. Place the bunch of spring onions directly on the grill and cook for 2-3 minutes per side or until charred and slightly softened. Remove from the barbecue and allow to cool slightly.
When cool enough to handle, chop the spring onions and place in a small bowl. Add the mayonnaise, lemon juice, salt and pepper and stir to combine.
Serve the grilled sweet potatoes hot from the grill with the charred spring onion mayo for dipping or spreading.
