Grilled squid

A snack or appetizer of briefly grilled squid with garlic-infused olive oil.

Ingredients:

  • Squid: 8 small baby squids or 1 large squid
  • Clarified butter: 2 tablespoons
  • Salt and pepper
  • Garlic olive oil: 2 tablespoons extra virgin olive oil mixed with a bit of grated garlic, 1 teaspoon lemon juice, and parsley (or cilantro), seasoned with salt and pepper

Preparation:

Heat a grill pan until very hot. Add 1 tablespoon of clarified butter and the squids (grill small ones whole, slice the large one into rings). Grill for half a minute, then add the remaining tablespoon of butter and quickly flip the squids to grill the other side for another half a minute. Briefly toss the squids in the pan, season with salt and pepper, immediately remove from the pan, and drizzle with garlic olive oil.

Serving suggestion: Serve with a good baguette. Sprinkle with chili flakes or smoked paprika.

Tips: The entire grilling and pan-holding process for the squids should not exceed 2 minutes, otherwise they will become tough and rubbery.
