Ingredients
Falafels
- Chickpeas – 140 g
- Baking soda – 0.25 teaspoon
- Pistachios – 70 g
- Shallot – 1 piece
- Garlic – 3 cloves
- Fresh cilantro – 1 bunch
- Fresh parsley – 1 bunch
- Grated lemon zest – 1 tablespoon
- Ground coriander – 1 teaspoon
- Cumin – 1 teaspoon
- Spelt flour – 1 tablespoon
- Vegan mayonnaise – 2 tablespoons
- Salt – 1 pinch
- Black pepper – 1 pinch
- Olive oil – 3 tablespoons
To Serve
- Hamburger buns – 4 pieces
- Vegan mayonnaise – 4 tablespoons
- Red tomato – 1 piece
- Red onion – 0.5 piece
- Pickles – 2 pieces
- Sunflower sprouts – 60 g
- Romaine lettuce – 4 leaves
Preparation
Step 1: Prepare the Falafel Mixture Place the pistachios, fresh herbs, shallot, garlic, and lemon zest in a food processor. Blend the ingredients, then add the drained chickpeas and spices and blend again until smooth.
Step 2: Fry the Falafel for Burgers Transfer the prepared mixture to a bowl, add the flour and vegan mayonnaise, and mix thoroughly. Form 4 patties and freeze them for about 30 minutes to firm up.
Heat olive oil in a pan and fry the falafels until golden brown on both sides.
Step 3: Assemble and Serve the Burgers Slice the pickles, onion, and tomato. Cut the burger buns in half and toast them cut side down on a dry pan until lightly browned. Spread vegan mayonnaise on the toasted sides of the buns.
On the bottom half of each bun, place a leaf of romaine lettuce, a falafel patty, a slice of tomato and onion, and pickle slices. Add sunflower sprouts. Top each burger with the other half of the bun and serve immediately.
