French Toast with Bacon and Cheese

Time for a French breakfast! Bread fried in egg with delicious toppings is a great way to start the day.

Ingredients

  • Butter, 2 tablespoons
  • Fresh thyme, 20g
  • Eggs, 2 pieces
  • Smoked bacon, 80g
  • Rustic bread, 120g
  • Spring onion, 1 piece
  • Black pepper, 1 pinch
  • Parsley, 5g
  • Salt, 1 pinch
  • Grana Padano cheese, 80g
  • Milk, 100ml

Preparation

Cut the spring onion into rings. Slice the bacon into pieces about 3-4 cm wide. Strip the leaves from the herbs and chop them. Mix the herbs with the eggs, salt, and pepper in a shallow bowl.

Fry the bacon in a heated non-stick pan for 1 minute. Add the spring onions and fry for 2-3 minutes, occasionally turning. Remove and set aside.

Dip 2 slices of bread in the milk and egg mixture, turning for a moment until they soak up the liquid. Heat a bit of butter in the pan and fry the bread for about 3 minutes. Flip the bread, sprinkle each with 1/4 of the cheese, and fry under cover for another 2-3 minutes until the cheese melts. Remove and keep warm. Prepare the remaining French toasts in the same way. Serve topped with bacon and onions.
