Ingredients
- Rhubarb: 500 grams
- Sugar: 200 grams
- Eggs: 8 pieces
- All-purpose flour: 2 cups
- Vegetable oil: 150 milliliters
- Vanilla sugar for cakes and desserts: 1 packet
- Icing sugar for dusting
- Baking powder: 1 teaspoon
Preparation
- Clean, peel, and chop the rhubarb into small pieces.
- Separate the egg whites from the yolks.
- Beat the egg whites until stiff, adding sugar and vanilla sugar towards the end, and continue beating until the sugar dissolves. Add the egg yolks, flour, and baking powder. Gently mix, then add the oil and combine. Finally, add the chopped rhubarb.
- Spread the prepared batter into a large baking pan (22×30 cm) lined with parchment paper (or greased and dusted with breadcrumbs).
