Elderberry Juice

Elderberry is a plant that has been a part of culinary and medicinal traditions in many countries for centuries. The juice extracted from the fruits and flowers of this plant is delicious and commonly used in pastry making, as well as in classic cuisine and bartending. How to extract juice from elderberries? Ingredients

  • Water – 1 liter
  • Sugar – 200 g
  • Elderberries – 1 kg

Preparation

Step 1: Wash the Fruit Place the elderberries on a sieve, then wash them thoroughly and pat dry with a paper towel, making sure they do not stick to the wet fruit.

Step 2: Remove Stems Take scissors and cut the fruits from the stems. Remove all green and inedible parts, leaving only the dark fruits.

Step 3: Cook the Fruit In a pot, bring a liter of water to a boil, then add the sugar to the boiling water and stir. Once the sugar is dissolved, add the elderberries. Simmer over low heat until the fruits soften (about 30 minutes).

Step 4: Blend the Fruit Insert a blender into the pot and gently blend the fruits to extract even more juice from them.

Step 5: Strain the Juice Place a piece of gauze on a sieve, and position the sieve over a jar. Start pouring the juice from the pot through the sieve. Strain it thoroughly to separate the seeds and fruit remnants from the liquid.

Step 6: Chill the Juice Let the juice cool, then seal the jar and refrigerate. The prepared beverage will be ready to drink for several weeks.
