A fantastic English recipe for delicious eggs.
Ingredients:
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon white vinegar
- 2 slices of bread
- 1/2 tablespoon butter
- 1 clove garlic
- a handful of fresh salad spinach
- salt and freshly ground black pepper
Preparation:
Prepare the Hollandaise sauce (use half of the specified ingredients for 2 servings).
Poached Eggs: (see video below) Fill a medium saucepan with water to about 8 cm height. Add salt and vinegar. Crack each egg into separate bowls.
Once the water boils, reduce the heat to medium and swirl the water with a spoon to create a whirlpool. Carefully slide one egg into the center of the whirlpool and cook for about 2.5 minutes until the egg white is set but the yolk remains runny. Remove with a slotted spoon onto a plate and repeat with the second egg.
Spinach: In a pan, melt butter and add sliced garlic. Sauté until the garlic turns slightly golden, then add spinach, season with salt, and stir with a wooden spoon for a moment until the spinach wilts.
Toast the bread in a toaster until golden brown. Place sautéed spinach on each slice and top with a poached egg. Drizzle with Hollandaise sauce, season with salt and freshly ground pepper.
